Our Food Philosphy

At Torrey Heights Dining, our food philosophy begins with thoughtful sourcing and careful preparation. We purchase at least 20% of our ingredients from small, owner-operated farms, ranches, and artisan producers within 150 miles of campus, supporting local agriculture while highlighting seasonal quality. Our culinary team prepares food in small batches to maintain freshness and minimize waste. We make our soups, stocks, salsas, and sauces from scratch in-house, and all meats are processed on site. We grind our own beef and pork and roast or smoke our meats to ensure quality and consistency in every dish. Our menus emphasize whole foods and whole grains, with vegan, vegetarian, and made-without-gluten options offered daily to provide balanced, nourishing choices for all guests.

Our Commitment to Sustainability

Sustainability is central to how we operate. With over a dozen local farms and artisans within 150 miles of the café, by dining with us, you are supporting your local community. But we don’t stop there: our chicken is raised without the routine use of antibiotics, our bacon and pork products are always gestation crate-free, we source all of our fish in accordance with Monterey Bay Aquarium’s Seafood Watch, our beef is humanely raised, and our eggs are cage-free. Our menus are designed to help us fight climate change, and our kitchen is primed to reduce food waste with Waste Not™.

Formally trained at a prestigious culinary school, Gavin honed his skills in the kitchens of London’s Michelin-starred restaurants, learning from the best in the business and discovering a world of flavors. He also made waves on the Food Network, showcasing his skills as a Chopped champion.

What sets Chef Gavin apart is his ability to turn the ordinary into the extraordinary. With every dish, he paints a vivid picture of flavors, textures, and emotions. Each meal becomes a masterpiece, and each bite an unforgettable adventure.

General Manager AJ Gonzales

General Manager AJ Gonzales

AJ's impressive career includes senior roles with esteemed organizations such as MGM Resorts International, Wynn Resorts, Sycuan Casino-Resort, Hard Rock Café International, and Southern Glazer’s Wine & Spirits. Most recently, AJ served as the Senior General Manager at Bardot Brasserie by Michael Mina, located within the Aria Resort & Casino.

AJ also brings extensive knowledge in beverage management, holding certifications from the Court of Master Sommeliers, Wine & Spirit Education Trust, and the Agave Spirits Institute, among others. We also appreciate the energy, expertise, and guest-centric approach he brings to Torrey Heights.
